Radicchio Cole Slaw with Pears and Walnuts


2 heads Royal Rose™ radicchio, cored, leaves separated
1 red onion, thinly sliced
2 Bartlett pears, peeled, cut into matchsticks
1/4 cup red wine vinegar
1/2 cup toasted black walnuts
2 teaspoons vegetable oil
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Slice radicchio leaves into thin strips. Soak the onion in cold water. Combine the pears, walnuts, vinegar, oil, pepper and sugar in a large bowl. Drain onions and add them to the pear mixture. Add the radicchio strips to the bowl, and toss well to combine.
