Radicchio and Blue Cheese Dip


2 heads radicchio
2 cups buttermilk
1 cup blue cheese
1 teaspoon salt
1 teaspoon black pepper

Remove radicchio leaves; wash and drain well.

 Combine the radicchio, buttermilk and cheese in the bowl of a food processor. Pulse until smooth.

 Adjust the seasoning with salt and pepper.

Additional Tips
Serve with raw vegetables.
