Radicchio and Black Bean Chili


1 cup black beans
4 cups water
4 bay leaves
1/2 cup celery, chopped
1 cup onion, chopped
2 cloves garlic, chopped
1 tablespoon olive oil
1 head Royal Rose radicchio, chopped
2 teaspoons chili powder
24 drops Tabasco® sauce
Salt and pepper
1/2 cup sour cream
1/2 cup medium hot salsa
Wash beans and soak them overnight in water. Add bay leaves and celery. Cover and simmer for 1 hour. In a skillet, cook onion and garlic in olive oil until tender. Add radicchio and cook 2-3 minutes longer. Add radicchio mixture to the bean mixture, along with chili powder and Tabasco. Let this simmer another 45 minutes, or until the beans are tender and the flavors have blended. Add salt and pepper to taste.

Serve in individual bowls with a dollop of sour cream and a tablespoon of salsa each.
