Bruschetta with Radicchio and Parmesan

4 large slices crusty bread
1 clove of garlic
1/2 head Royal Rose radicchio
1 tablespoon extra virgin olive oil
3/4 cup shaved pieces of Parmesan cheese
Salt and pepper


Lightly toast or grill the slices of bread. Rub well with the clove of garlic and put on a serving plate. Meanwhile, cut the radicchio into fine julienne strips. Mix in a bowl with the cheese, salt, pepper and enough olive oil to moisten. Distribute evenly over the prepared bread and serve as an appetizer.
