2 lbs Fresh cod, cut into large cubes, 3×3 inch
1 bottle of beer
1 pinch of sea salt, coarse
1 pinch of black lava salt
6 egg whites
1 cup flour, all purpose
½ gallon oil, vegetable or fry
1 radicchio head, leaves only, washed, dried on towels
In a large bowl, whisk egg whites and salt until you obtain a meringue texture. Add beer and keep whisking for about 3 minutes. Sift in flour and whisk for approximately 3 more minutes. Refrigerate.
In a heavy deep skillet heat oil until it reaches 350°. Fry radicchio leaves until crispy, set aside on paper towels to absorb excess oil. Dip cod cubes into beer batter and fry until golden.
Serve in a cone with garlic mayo and sprinkle with black lava salt.
