1 head Royal Rose radicchio
4 slices country wheat or crusty white bread
1/4-1/3 pound leftover roast beef or pork, thinly sliced
Sauté the radicchio in a small amount of olive oil until barely browned. Spread the bread slices with a thin layer of mayonnaise, and then divide the radicchio between two slices. Add the meat slices. Cover with remaining bread. Slice and serve.
