4 slices dark rye or whole wheat bread
1 poached or grilled chicken breast, thinly sliced
4 slices smoked gouda cheese
4 large leaves Royal Rose radicchio
Spread the sliced bread with a small amount of mayonnaise. Top two slices of bread with the chicken, divided into two portions. Then add to each two slices of cheese and top with two radicchio leaves. Top with remaining bread slice and serve.
