Grilled Radicchio, Fingerling Potato and Mennonite Bacon Salad with Balsamic Yogurt Sauce. By Todd Clarmo and Anthony Walsh

Ingredients

2-3 pounds Arctic Char
Salt and pepper
8 ounces double smoked Mennonite bacon, sliced
2 heads Royal Rose Radicchio
1 red onion, sliced in 1/2 inch slices
12 ounces Fingerling potatoes, boiled, skin on, halved
Fresh basil leaves

Sauce
3/4 cup plain low fat yogurt
1/4 cup balsamic vinegar
1 tablespoon chopped shallots
Fresh thyme
1 jalapeno pepper, minced
Roasted garlic
Salt and pepper to taste

Methods/steps
Combine sauce ingredients and set aside.
Filet Arctic Char, cutting wach fillet into two portions. Season with salt and pepper.
Cut the bacon slices into 1 inch pieces and fry until lightly crisped.
