1 head EVS Radicchio di Treviso, grilled (see general grilling instructions)
8 thin slices firm-textured sandwich bread
8-16 thin slices Gruyere or your favorite hard cheese
8-16 thin slices coppacolla, salami or spicy ham
Soft butter, as needed
Slice grilled Treviso, season with salt and pepper to taste. Make sandwiches by layering in this order: cheese, Treviso, meat, cheese. Very lightly butter the outer surface of bread. Grill on a hot griddle in a skillet on both sides until golden brown, or grill in a sandwich press. Serve immediately.
