Grilling Treviso: Trim core and cut Royal Rose Radicchio di Treviso lengthwise into halves or quarters and baste with olive oil. Set on a medium to hot grill and turn frequently to avoid burning. Use aluminum foil to protect leaf tips if desired. Grill until Treviso is fork tender, about 12-15 minutes. Salt to taste.

Roasting Treviso
Heat oven to 450º F. Trim core and cut Royal Rose Radicchio di Treviso lengthwise into halves or quarters and baste with olive oil. Place face down in shallow roasting pan. Roast until Treviso is fork tender, about 15-20 minutes. Salt to taste.
Broiling Treviso: Preheat broiler. Trim core and cut Royal Rose Radicchio di Treviso lengthwise into halves or quarters. Arrange side by side in a broiler pan or on a cookie sheet. Drizzle a little olive oil over the top. Broil until they start to darken. Turn the radicchio once or twice to avoid burning. Watch closely. Radicchio is done when fork tender, about 12-20 minutes. Salt to taste.
